Metal finish means bare, polished aluminium — no coating at all. That's its strength:
- High flame, no fear. You can sear, bhunao and stir on full flame. There is no coating to scratch or burn off.
- Deshi cooking is rough cooking. Bones in the karahi, a metal spoon scraping the bottom, scrubbing after biryani — bare metal takes all of it.
- It outlives everything else in the kitchen. A heavy-gauge metal finish pot is a ten-year purchase.

What non-stick is actually for
Non-stick is for the food that sticks: eggs, paratha, omelettes, shallow frying with little oil, and easy cleanup.
- Less oil, easier wash. Food releases with a wipe.
- Gentle cooking. Medium flame, wooden or plastic utensils, no metal scrubber.
